Peppermint Bark Popcorn

Finely crushed candy canes, chocolate candies, and white chocolate coating turn popcorn into a deliciously festive Christmas treat.
NOTE: Flavored oils* (for candy making) will combine best with the almond bark, if you can find them. Otherwise, if using extract*, the almond bark will seize or go lumpy... Cheat and go thee extra mile with peppermint flavored baking chips or add the peppermint extract to the chocolate baking chips  Either way works good - to achieve that Peppermint Flavor Goodness:)

Ingredients

    16 c. popped popcorn (fresh, or about 2 bags microwave unbuttered, natural/salted popcorn)
    1 lb. vanilla almond bark
    1 6-oz. box candy canes (12-ct.), crushed (about 1 generous cup, candy cane sprinkles also work!)
    2 tbsp. Sprinkles, red [if desired]
    2 tbsp. Sprinkles, green [if desired]
    1/4 tsp. peppermint oil or 2 tsp. peppermint extract *Optional *See Note
    3/4 c. peppermint flavored baking chips (or chocolate)

Directions

Place popped popcorn in a very large mixing bowl.

Melt almond bark according to package instructions. (I've always melted mine in a small crockpot in just a few minutes.)

Pour melted coating over popcorn; sprinkle crushed candy canes; and gently toss with a large spatula to coat popcorn.

Spread popcorn mix onto waxed paper and add add a dash of color with the Sprinkles [if desired]. Then let cool.

Melt peppermint or chocolate baking chips slowly in the microwave (follow the bag instructions).
When completely melted. Drizzle over popcorn mixture.
Let mixture dry completely until chocolate and almond bark are hardened.

Once mixture is solid, break it apart into chunks, and enjoy!
