Coconut Strawberries

Aka: Strawberry Fruit Balls, Strawberry Coconut Macaroons

“This strawberry shaped confection is a tasty and pretty addition to your Christmas trays.”

INGREDIENTS - Makes about 6 dozen.
  • 1 {12 ounce} can condensed milk
  • 1 {6 ounce} box strawberry gelatin
  • 14 ounces fine sweetened coconut flakes
  • 5 to 6 drops red food color
(*DO NOT use sugar-free jello)

ICING
  • ¼ cup confectioner's sugar (also called icing or powdered sugar)
  • 1 scant tsp. cream
  • 4 drops green food coloring
  • Toothpicks dipped in green food coloring

DIRECTIONS

1 - In a large bowl mix together the coconut, dry jello and condensed milk.
2 - Chill the mixture. Dip 24 toothpicks into green food coloring, dipping in about ½ way. Let dry on wax paper.
3 - Shape the mixture into  hand-form strawberrys, roll in the reserved jello powder.
4 - With the green icing, make a "hull" at the tip of the strawberries.
5 - insert toothpick and Chill until firm.


 For a great gift idea, save the plastic strawberry containers from your strawberries, or you can purchase some from any craft store. Fill the containers with these strawberry candies and cover with plastic wrap. Tie each container with a pretty ribbon or bow.
