Mint Covered Chocolate Wafers

Day 3 - Christmas in July Presents
This are good when you are craving that certain mint wafer cookie, when it's the wrong time of year.
Another take on the "Thin Mint" using wafer creme sandwich cookies, cream cheese, mint extract and chocolate candy coating.

INGREDIENTS
3 cups crushed *Chocolate Sandwich Cookies (about 65 wafers)
6 ounces *Cream Cheese, softened
Granulated Sugar (for dusting)
1 pound chocolate mint candy coating disks, chopped
2 tablespoons *Crisco shortening
Green and White sprinkles, optional

Tip #1: The cookies DO NOT need to be the expensive "oreos" feel free to use a cheaper brand as you are just crushing them up anyhow.
Tip #2: You can also use CandiQuik chocolate almond bark in place of the candy coating disks, also thinned out a bit with shortening.

DIRECTIONS
1. In a large bowl, combine chocolate wafer crumbs and cream cheese. Shape into 1-in. balls. Coat bottom of a glass with cooking spray, then dip in sugar; flatten balls to 1/4-in. thickness. (Re-dip glass in sugar as needed.) Freeze 30 minutes or until firm.

2. In a microwave, melt candy coating disks and shortening; stir until smooth. Dip cookies in coating mixture; allow excess to drip off. Place on waxed paper; if desired, decorate immediately with sprinkles. Store between layers of waxed paper in an airtight container in the refrigerator.
