‘NILLA Holiday Cookie Bites

I love these creamsicle enhanced raspberry bites!!! A no-bake cookie thats easy and cheap and fun to make.
 
Stunning bite-sized, no-bake desserts stack up NILLA Wafers with the flavors of orange juice and raspberry jam all coated with a sweet candy coating.

** Make sure not to overfill the layers with any filling you want to use so that coating will stick easily to the outside. It’s also important to let these sit for the amount of time stated in the recipe. When they are allowed to sit and soak up the juice and filling they become like cake and they become more condensed too.

Ingredients

  • 36 NILLA Wafers
  • 2 Tbsp. Orange Juice
  • 1/4 cup Raspberry Jam
  • 8 oz. Vanilla Candy Wafers (melts) (about 1-1/2 cups)
  • 1 Tbsp. Oil
  •  Assorted decorations: crushed starlight mints, colored sprinkles, small round candies, coarse sugar and decorating icings 
  • Instructions

  • BRUSH flat sides of 24 NILLA Wafers with juice, then spread with jam.
  • PLACE remaining wafers, rounded sides up, on waxed paper-covered baking sheet; top each with 2 jam-topped wafers, jam sides down. Refrigerate 6 hours or overnight.
  • MELT candy wafers as directed on package; stir in oil until blended.
  • Dip NILLA stacks, 1 at a time, in melted candy wafers, turning to evenly coat stack and reheating candy wafer mixture if needed. I gently inserted a skewer into NILLA stacks to make dipping a little easier.
  • Return to baking sheet. Immediately add decorations to resemble photo.
  • REFRIGERATE 30 min. or until candy coating is firm. Keep refrigerated.

    A little raspberry jam and a brush of orange juice is the secret to making the cookies soft like cake. The orange juice and raspberry jam also add a lot of flavor to the cake bites. You could change up the flavor of the jam for even more ways to make this easy Christmas dessert.

    Here are some Jam Flavors to try:
    Strawberry.   |   Orange Marmalade.   |   Apricot.   |   Berry Blend.   |   Lemon Curd.   |   Blackberry.

    All of these flavors will be delicious along with the Nilla wafers and orange juice. The orange juice adds just a slight citrus taste that works well with most fruit flavors.


    Various Toppings for Nilla Cake Bites are:
  • Mini Chocolate Chips. The smaller the better and we love the candy coated versions too.
  • Sprinkles. Any sprinkles you like! For the holidays we like to find red, white and green sprinkles.
  • Sixlets. Sixlets look so cute and festive. I like the white pearl sixlets the best because it looks like a little pearl sitting on top.
  • Mini M&M’s. I used three mini red M&Ms on the top of some to look like little holly berries.
  • Crushed Candy Canes or crushed candy cane bark. Crushed candy canes always look great on top of Christmas treats.
  • Gold and Silver Stars. I find these metallic stars at craft stores and online. They are made by Wilton.
  • Another idea is to use icing or Cream Cheese Icing too.
