Homemade Ritz Thin Mints

If you love the Girl Scout Mint Cookie - you'll Love this Cheat Version of a Thin Mint !!



No-Bake Homemade Cheater Thin Mints 

aka: Thin Mints with Ritz Crackers Cookies


Ingredients:
    Two sleeves of Ritz Crackers
    1 pkg of 1lb 8 oz, chocolate almond bark
    1/4 teaspoon "pure" mint extract [or spearmint, peppermint]
    optional - 20 round peppermints , crushed fine, for toppings
*NOTE::.. just remember start small doses of extract flavorings, then taste the chocolate and add a bit more if desired or you will end up ruining your chocolate with a bitter taste.]
Directions:

In a microwave safe bowl, blend chocolate chips, mint extract and shortening. Microwave in 15 second increments until melted and smooth, stirring each time.
2 Line a baking sheet with wax paper. Place on top of the wax paper and allow time for the chocolate to solidify and set up before storing.

Notes: One sleeve Ritz = makes about 27 Cookies, -  also when using an extract always use PURE as the imitations tend to leave an after-taste. -  Use a [new] Tweezer or Plastic Fork with middle 2 tines removed for easier dipping, - ** and if your doing alot of these a small crockpot on warm does wonders to keep the chocolate warm and manageable while dipping.
