CHRISTMAS APPLE SALAD

The red and green apples with sprinkled feta cheese for snowfall effect makes this a perect holiday treat.

2 red apples, diced
1 green apple, diced
1 (24.5oz) pineapple chunks, drained
1 cup celery, diced
1 cup golden raisins (soaked in 2 tablespoons apple juice or pineapple juice, drain)
1 cup pecans, chopped
1 cup feta or sharp cheddar cheese, grated

Combine all of the above in a glass salad bowl. Mix dressing and then lightly toss together.

Dressing:
1 cup mayonnaise
1/4 cup vinegar (or dry white wine)
2 tablespoon white sugar
