Stained Glass Window Bar Cookies

Not sure if we'd call these Cookies or a Bar persay, but either way they are a great addition to your holiday plate. They are seriously rich and delicious! 

Simple 3 ingredient, stained glass marshmallow cookies... not necessarily for Christmas but I'd bet we could substitute other mini- marshmellow flavors such as the cocoa, gingerbread flavored marshmellows,


STAINED GLASS WINDOW BAR COOKIES aka Cathedral Cookies

INGREDIENTS

    1/2 cup unsalted butter
    12 ounces semi-sweet chocolate chips
    10 ounces Kraft multi-colored mini-marshmallows 1 cup shelled salted peanuts or walnuts, chopped [optional] 7 ounces sweetened grated coconut [optional]

INSTRUCTIONS

1. Using a double boiler, melt the butter and chocolate chips together over low heat (stirring occasionally) until smooth. Remove from heat and cool slightly.
2. In a large mixing bowl, toss together the colorful marshmallows and nuts, then stir in the melted chocolate mixture.
3. Sprinkle five 9" sheets of wax paper generously with coconut so that the mixture won't stick. Divide the mixture into five evenly-sized pieces placing one on each sheet of wax paper. Form each piece into a 2" diameter log and refrigerate until firm (overnight or about 9 hours).
4. When ready to serve, unwrap the log and cut it into 1/2" thick slices.
Makes about 60 windows.



** These freeze well if you want to make them far in advance.
