Homemade Gingerbread Spice
Add a dash to your Eggnog or morning Oatmeal for a holiday flair! Put some of this mix in an 8-oz jelly jar and give as a gift along with cookie cutters, some standard cake mixes, along with a sampling of recipes.
Mix also works with hot cocoa, a yellow cake mix, pancake or waffle batter, ground coffee before brewing, scones, muffins, cookies, whatever you want to have a gingerbread flavor.
Note: Pumpkin pie spice is heavy on cinnamon, whereas gingerbread spice has a balance of cinnamon, allspice, nutmeg and cloves and ginger
YIELD: 1 3/4 cup mix

INGREDIENTS
3 tablespoons cinnamon
2 tablespoons ground ginger
1 teaspoon allspice
½ teaspoon nutmeg
1 teaspoon ground cloves
½ teaspoon Ground Cardamom [optional]
1 teaspoon Gingerbread Spice Mix – for sprinkling over Hot Cocoa
For a standard size cookie recipe (makes 2-3 dozen), use 4 teaspoons.
To flavor ground coffee before brewing, use 2 teaspoons.
For french toast, pancakes or waffles, use 2-3 tsp to flavor batter that is meant to make a dozen or so servings.
For standard size cakes (9x13 or two 8" rounds) use 5 tsp of the mix.
