Classic SPRITZ COOKIES Recipe



These are a MUST at my home for christmas evey year. Even if we do not do anymore baking these are a "must have" year after year.


Variations: Top off with a spiced gumdrop, marishino cherry, chocolate chip, holiday cake sprinkles,  or just alternate the vanilla for another flavor and add some food coloring . If by chance you leave them in too long .. brush the backside of the cookie with some melted almond bark and "wallah" Perfect cookie once more !!

Example: Substitute Mint Extract, add a bit of green food coloring, mini baking m-m's and the tree disc ---------- Creates the perfect Mint green christmas tree with mini m-m's for holiday parties or gift giving .

Ingredients
    * 1 cup butter
    * 3/4 cup white sugar
    * 3 egg yolks
    * 1 teaspoon almond extract
    * 3 cups flour
    * 1/2 teaspoon baking powder
    * 1/4 teaspoon salt
Directions

1. Preheat oven to 400 degrees F (205 degrees C).
2. Cream together the butter and the sugar. Add the 3 beaten egg yolks and one teaspoon of almond extract. Mix until well blended.
3. In a separate bowl, mix together the flour, baking powder and salt. Gradually sift into the butter mixture and stir well.
4. Chill until firm (2 - 3 hours).
5. Using a cookie press, press out cookies onto a COOL cookie sheet.
6. Bake 10-12 minutes or until edges are light golden brown. Cool 2 minutes on cookie sheet on cooling rack. Remove from sheet; cool completely.
