Santa's Mint Fudge


Turned out great!!!! Tastes like Gourmet Andes Mint Fudge


Ingredients
  • 1 - 12 oz package semi-sweet chocolate chips
  • 1/2 bag or 1 cup white chocolate chips
  • 1 - 14 oz can sweetened condensed milk, divided
  • 2 teaspoons vanilla extract
  • 1 Tablespoon pure pepper[mint] extract
  • 5 drops of green food coloring, optional
Instructions
 1- Line 8- or 9-inch square pan with wax paper. Spray with cooking spray.
 2- MELT chocolate chips with 1 cup sweetened condensed milk in heavy saucepan over low heat;
 3 -Add vanilla.
 4- SPREAD half the mixture into prepared pan; chill 10 minutes or until firm.
 5- Hold remaining chocolate mixture at room temperature.
 6- MELT white chocolate chips with remaining sweetened condensed milk in heavy saucepan over low heat (mixture will be thick).
 7- Add peppermint extract and green food coloring.
 8- SPREAD on chilled chocolate layer; chill an additional 10 minutes or until firm.
 9- Spread reserved chocolate mixture on mint layer.
10- Chill 2 hours or until firm. Cut into squares. Store in an airtight container in the refrigerator up to two weeks. Fudge will freeze and thaw well also.
