HomeMade Caramels

These Caramels are perfect because they are soft, and creamy, and dreamy and the are made in the microwave. No scorching, no constant stirring, no candy thermometer.

Soft Caramels

INGREDIENTS
    1 cup Butter
    1 14 oz. can Condensed milk, sweetened
    2 1/2 cup Brown sugar, packed
    1 cup Corn syrup, light
    1 tsp Vanilla
    1 dash of salt

1. First, melt butter in the microwave.
2. Add sweetened condensed milk, brown sugar, and corn syrup.
3. Stir together. Microwave for 4 minutes.
4.Remove from the microwave and stir....
Microwave for another 4 minutes. It’s going to start getting thicker after every 4 minutes of microwaving. 
5. Remove from microwave and stir again. Microwave for 4 more minutes. 
6. Remove from the microwave, stir.
**Check to see if caramel has reached the soft ball stage by dropping a small ball of caramel into a glass of water. It should form a soft, pliable ball. Remove caramel from water and check to see if it is the right consistency. if not try an additional minute at a time.
7. Check caramels for softness and microwave another 1-2 minutes (after this 2 minutes of cooking you will have cooked it 4 times for a total of 13-14 minutes).
8. Once caramels have reached desired consistency add vanilla and a dash of salt and stir 
9. Line pan with parchment paper and spray it with baking spray. Then pour caramel mixture into pan. 
10.  **Let caramels sit until completely cooled **.

** If you are topping off a ritz cracker ... line the pan with ritz flat side down and drop spoonfuls of caramel on each ritz persay....and add another ritz on top ... to let caramel harden then.
A pizza cutter works wonderful for cutting caramels. Wrap in rectangles of wax paper, parchment or pre-cut candy wrappers and twist on both ends.
