Orange Slice Fruit Cake

Note: For those who do not like the traditional fruit cake, will love this one!

INGREDIENTS
    1 cup butter
    2 cups sugar
    5 eggs
    1 tablespoon vanilla
    4 cups flour
    1/2 teaspoon soda
    1 teaspoon salt
    3/4 cup buttermilk
    8 ounce package dates, cut up
    1 pound orange candy slices cut into small pieces
    4 ounce can Angel Flake coconut
    2 cups pecans, chopped
Grease a large tube pan and then line with waxed paper. Grease again on top of waxed paper. Preheat oven to 300º.

Cut orange slices in small pieces. In large bowl, combine candy, dates, nuts and coconut and dredge with 1/4 cup of the 4 cups of flour and set aside. Sift rest of flour with soda and salt. 

 Cream butter and sugar until fluffy. Add eggs, one at a time, add vanilla, mixing well. 

 Add dry ingredients alternately with buttermilk. Fold in date and candy mixture. Pour into a prepared tube pan. Bake at 300º for 2-1/2 hours.

GLAZE
1 cup fresh orange juice
2 cups confectioners' sugar
In a medium bowl, combine the orange juice and confectioners' sugar. Stir until smooth and well blended. Gradually pour the juice mixture over hot cake as soon as it comes out of the oven. Use a toothpick to prick the cake in several places, if desired. Let the orange slice cake stand in the pan overnight.. Keep refrigerated or freeze.
