Mounds / Almond Joy Brownie Bites

  These bake up in a mini muffin pan and make 48 brownie bites using common pantry ingredients such as: a boxed brownie mix, packaged sweetened flaked coconut,  sweetened condensed milk and sliced almonds. 
Don't have almonds on hand? Leave them out and you have Mounds Brownie Bites!

INGREDIENTS
    1 – 9×13 size brownie mix
    4 cups sweetened flaked coconut
    1 -14 ounce can sweetened condensed milk
    1 package of chocolate almond bark or chocolate candy quick
    4 dozen almonds (optinonal)
INSTRUCTIONS
    Prepare mini muffin cups with mini-parchment paper liners or non-stick cooking spray sparingly.
    Note: The Chocolate coating may not stick to the cookie cup if too much cooking spray is used Prepare brownie mix according to the package instructions, and fill muffin cups about 1/2 full.
    Bake according to package directions. Mine took about 15 minutes.
    Remove brownies from tins, OPTIONAL: stick an almond in the top of each brownie.
    While they are cooling, combine sweetened condensed milk and coconut in a bowl.
    Press a ball of coconut on top of each brownie, and put in the freezer for about 30 minutes.
    Melt chocolate candy according to package instructions.
    Drizzle/pour a spoonful of melted chocolate over the tops of the brownies on a cookie sheet lined with waxed paper, [making sure to cover the coconut and brownie baseline so they do not seprate] and place in the refrigerator to set.
NOTES:If you perfer dipping the tops in your chooclate, work quickly !!. Once they begin to come to room temperature you may run into the problem of the coconut ball falling into your chocolate.
Hint: do about one dozen at a time, keeping the others in the freezer until you dip them
